Lest we seem too Bay Area-centric, here's Andrea Strong's report on Max McCalman and Artisanal's new cheese education program for you poor cheese freaks from the other coast:
Tired of learning about wine? How ‘bout studying cheese? Terrance Brennan’s Artisanal Cheese Center is starting a Cheese Education Program, taught by Max McCalman and Daphne Zepos, the Center’s Director of Affinage. Director of Affinage, you ask? Well, that would be the technical term for “Head of Cheese Aging.” Hmmm. I guess you sort of need a fancy term for that job title because Director of Cheese Aging just doesn’t sound as impressive as Director of Affinage. Funny, in my house cheese aging is called “Mold Caused By Failing to Throw Out the Cheese When It’s Been In The Fridge For Over Two Months.” There is no director title for this position. It’s just me. Anyway, back to the Cheese Center, the courses will cover a full range of topics, including pairing wine and cheese, and will be held in the demo kitchen at the center....
