
Look at that. Doesn't that sight just make your mouth water? Blanketed by a covering of ash, and secreted away inside another layer of ash, it looks more like a piece of luscious cake than a section of cheese. But if that were my birthday cake, or even my wedding cake, I would be delighted!
The humble goat's milk can indeed produce a substance so divine it must be revered. I am a big fan of chevres in general, but the Humboldt Fog chevre is truly the king among them. Rich and creamy, at once sweet and tangy, the soft substance melts in your mouth, bringing with it the kiss of angels. It is excellent on salads (if you would dare dilute the experience!), with pretty much any kind of fruit, spread on bread, or simply cut into thin slices and eaten plain. In other words, with this cheese, you simply cannot go wrong.
Honestly, I can't imagine a wine that would not go well with this cheese. Even champaign, I think, would pair well. (But then, I am of the opinion that you can't really go wrong with champaign.) Nevertheless, I would definitely pick out a dry wine for this, something to clean and refresh your palate as you reach for the next creamy bite...
This cheese is made by only one farm, Cypress Grove Chevre, and is the winner of several awards.
I have inquired as to whether Cypress Grove will allow the general public to tour (they are only hours away from me!). If they do, i promise exciting pictures and a full description of the event. If they don't... well, I suppose I shall have to try to go in the guise of a member of the press...
