Tea Time: Stilton

The King of Cheeses: English Version. I have tried several blue cheeses, but none really blew me away. I decided, why settle for less? It didn't disapoint.

Stilton is a pasteurized aged cows milk cheese. It is also England's only name controlled cheese.

This is one of the few cheeses I think actually gets better the longer you let it languish in your fridge. Making sure this cheese is properly ripe is very important. You can tell when it is ready because it is just a joy to smell.

It is so creamy and intense. I feel that it is categorically different from other blue cheeses in terms of taste. The mold gives it a bit of a sandy texture. I can't really put the taste experience into words. When I get a peice I sit and eat it till it is gone. One of the few cheeses I have bought more than once. I think I may buy a whole wheel of this cheese.

Apperently there is "white stilton" which is very young stilton with no mold yet growing in it. I want to try that as well.
