So my brother recommends Fiscalini Bandaged Cheddar, which is made in a small place in California. He probably learned about it from another post on the diaries. I was thinking... Bandages? Is it like a crazy undead mummy cheese? When I saw it at whole foods (Portland), I had to try it...
It really was bandaged! the rind was mostly bandages which resulted in a very thin rind and a consistent taste throughout the cheese. The first little taste I had as I was waiting for it to warm up to room temperature reminded me of bacon. It is a very dry cheese and almost as hard as a reggiano.
The taste? It is sharp but it doesn't over do it. It definately tastes like cheddar, but it has hints that remind me of other cheeses such as aged gouda.
There were some disappointments as well: It wasn't oarnge. No cartoon mice came and tried to steal it while I was eating it either, which are two things I expect from a cheddar. At least it came through with the actual bandages...
