Looking up Blu del Moncenisio, an amazing creamy cow's blue from Piedmont I had at Oliveto friday, I discovered the excellent website of Guffanti Formaggi, a cheesemonger from Arona, on Lago Maggiore. They have some very unusual items.
I have bought some interesting stuff from the Pasta Shop recently: Fiscalini bandaged cheddar, runner up at the ACS tasting...
It had powerful true Cheddar flavor and texture, though not quite up to the complexity of the Neal's Yard Somerset cheddars (Featured in the latest Slow magazine: see this.)
Also picked up some Roccolo and a very unique cheese that looks sort of like a super-runny taleggio, but tastes custard-y. Tasting notes to come.
